What is Amylase?

Amylase is a biological material, macromolecule, organism-derived product, or complex preparation rather than a conventional small-molecule chemical. ‘Amylase’ is a generic enzyme class name (multiple distinct alpha-/beta-amylase enzymes from different sources exist); the exact single enzyme intended is not specified, so it cannot be confidently matched to one compound record. Its defining characteristics depend on biological origin, molecular or cellular composition, processing, and storage.
